Re the lace knitting, you may want to take a look at "Victorian Lace Today" by Jane Sowerby. She talks a little bit about the problems of converting Victorian patterns into modern ones.

Also, Piecework magazine (on crafts and history) sells a series of books called "Weldon's Practical Needlework" which were originally published in the 19th century.
